I was craving comfort food last night and made this delicious #vegan plate of mashed potatoes with mushroom gravy,  roasted carrots and Brussel sprouts and steamed garlicky greens and lentils. 100% plant-based packed with nutrients, fiber and protein - and low in fat!

Dreaming about the amazing #vegan mac n cheese from Little Pine - finally got to try it when we visited a couple weeks ago. This place opened up a block from where I used to live in LA...wish it were there two years ago!

The moment I made the connection between the animals I loved (my two fur-babies Gus and Miles 😸😸) with the animals I thought of as
Epic moment: The pouring of the cashew cheese! This will get stirred into the spiral pasta with steamed broccoli and served on a bed of steamed kale. Yum!! The cheese is made with 1/2 cup soaked raw cashews, 2 peeled/boiled red potatoes, 1/3 cup nutritional yeast, 1/2 teaspoon garlic powder, 1 teaspoon miso paste, 1 teaspoon salt, 1/2 cup water. Blend until smooth. Pour on...EVERYTHING!

Amazing roasted vegetable tacos in Paso Robles. They didn't have any vegan dishes on the menu but had no problem whipping up this amazingly beautiful and delicious plate!! Great way to end an amazing weekend and now I see why they won best restaurant at #FWIBF16
Breakfast at our old favorite spot in Eagle Rock, Coffee Table. Soyrizo breakfast burrito tofu, spinach and avocado, hash browns and fruit plus a soy iced latte. Now beginning our drive up to Paso Robles for the Firestone Walker Invitational Beer Fest tomorrow!!
