Authentic Guacamole Recipe + Why Avocados Are Good For You

Avocados surely must be one of the most amazing foods. Not only are they creamy and delicious, avocados provide many health benefits such as:

  • Avocados were given a glycemic index of ZERO which means that they cause minimal fluctuations in blood sugar levels. Eating foods with a lower glycemic index is important for helping to prevent type 2 diabetes and coronary heart disease.
  • The nutrients and enzymes in avocados reduce inflammation in the stomach and small intestine’s mucous lining Aids which aid in digestion.

  • Avocados contain an antioxidant called carotenoid leutein which protects our eyes from oxidative stress damage which can lead to poor vision, cataracts, and other problems.
  • The thick skin protects avocados from pesticides which means you don’t have to shell out more money to buy organic

Guacamole is a great way to incorporate avocados into a dish and is also a great alternative to other dips that could be more fattening without the added health-promoting qualities. And you don’t always have to serve it with tortilla chips which may be fried and have unwanted oils and salt. I frequently eat guacamole as a dip for veggies (my fave pairings include carrot sticks and red bell peppers).

Authentic Guacamole

Serves 4 (but you’ll probably want more!)

Ingredients

  • 4 ripe avocados
  • 1 shallot, diced
  • 1 ripe tomato, diced
  • 1 jalapeno, minced  finely
  • 1 clove of garlic, minced finely
  • 1 small bunch cilantro, finely diced
  • 1 Tbsp. fresh lime juice
  • Salt to taste

Mash the avocado with the shallot, jalapeño,1 garlic, cilantro, lime juice and salt. Once mixed, add tomatoes and stir minimally so as not to mash them too much.

Serve with tortilla chips and enjoy!

Tip!

If you like it a little spicier, use a serrano pepper instead.
