Easy Cinnamon Rolls for Lazy Vegans

Ever have a craving for cinnamon rolls but don’t have, say, 2 frickin days to dedicate to making them?! Me, too. This morning I had that craving and I suddenly remembered something. When I was in college, I worked at bagel shop and one of the most popular things on the menu was the cinnamon sugar bagel. It was simple, but amazing! So I decided to recreate that with what I had in the fridge – a panini roll and earth balance.

This is ridiculously quick, easy and super delicious! And it’s versatile. You can use a roll, a slice of bread or a bagel. Spread a thin layer of earth balance.

Blend 2 tablespoons of sugar and a tsp of cinnamon together and top the rolls evenly with the mixture. You’ll want a decent layer so that it will melt and create a sweet, crispy crust.

Bake at 400 degrees for 5 minutes, or until the butter/sugar mixture starts to bubble. Let it cool for a couple minutes before eating, as it’s really hot. Seriously, the waiting is the hardest part of this recipe!

So it might be a stretch to call these cinnamon rolls but like I said, they’re easy, and they’re meant for lazy vegans! Enjoy!

    I make a similar bread. When I was a kid, it was exactly like yours, but on white bread (like, Wonder), and we put it in the toaster, then put on the butter, cinnamon, sugar, and sometimes raisins. Now, vegan, me, I put Vegan butter on frozen Ezekiel bread slices (all 3 kinds work well) and sprinkle cinnamon and sugar on top and press a few raisins on top. I nuke it till it’s thawed and yummy. I then make basic glaze with powdered sugar (I usually blend in spice blender to make my own from vegan sugar) and mix with Silk to make the glaze. It’s SO similar to a cinnamon bun/bread. When the bread is heated just enough to be chewy, but not hard….amazing. My microwave just broke, so I’m getting ready to make it in my NuWave oven. Wish me luck! Thanks for your rendition too!
