Everyone has been posting online recently about zucchini pasta, or “zoodles.” I have seen it cross my path enough times that I finally ordered a julienne peeler so I could try it out for myself. I find it kind of amazing that this idea had never crossed my mind earlier!
With all of the “gluten-free” craze going on lately I’ve seen an upswing in recipes using pasta replacements or substitutes. One that has really caught my eye recently has been the idea of using zucchini instead of pasta. My mom used to make us spaghetti squash fairly often when we were growing up and now that I think about it, that was probably an amazing way to get more vegetables into our diet. I do not personally have any issues with gluten but I’m always looking for ways to eat more whole, unprocessed foods. I was a little skeptical at first that the zucchini pasta would turn out as well as I had seen in pictures online. I was even wondering if I should order a spiralizer instead because the julienne peeler seemed too simple. But it really did work out! The strands were long enough to swirl around on my fork just like spaghetti. I have been pleasantly surprised by this delicious new pasta substitute. The ease and tastiness of zucchini pasta will no doubt find its way into my rotation of favorite recipes.
- 4 organic zucchini squashes*
- Wash your zucchini then use a julienne peeler like the one pictured to create long, slender strands. Be careful to avoid your fingers and to move slowly as the peeler is very sharp!
- After peeling the zucchini, steam in steaming basket or in a skillet with a little bit of water or vegetable broth for about 3 minutes.
- Once the strands are tender, add your choice of sauce and cook until heated, only a minute or so more.
- I made this zucchini pasta with some walnut avocado pesto last night and it turned out delicious. I also added some steamed broccoli and topped it off with some diced cherry tomatoes.
- *Cherry tomatoes and summer squash such as zucchini are on the list of the 12 most contaminated fruits and vegetables so I would recommend purchasing organic if possible
